Nectarine Cheesecake

Ingredients

  • 8.75 oz graham crackers, crushed
  • 1/2 cup butter, melted
  • 1 None orange, zested
  • 8.75 oz cream cheese, chopped
  • 4.5 oz mascarpone
  • 1/2 cup heavy cream
  • 2 tbsp granulated sugar
  • 4 None ripe nectarines, pitted, sliced

Instructions

  1. Lightly grease an 11x5 inch tart pan with removable base.
  2. In a food processor, process graham crackers to fine crumbs. Add butter and orange zest. Pulse until combined. Press firmly into base of pan then chill for 1 hour, until firm.
  3. Beat cream cheese, mascarpone, heavy cream and sugar together for 2-3 mins, until smooth. Fold in 1/2 of the nectarines. Spread over prepared base, smooth surface and chill for 2 hours, until firm.
  4. Serve topped with remaining nectarine slices.
