Ingredients

  • 1 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons cold water
  • 1/2 teaspoon cream of tartar
  • 2 unbeaten egg whites
  • 1 teaspoon vanilla

Instructions

  1. Put the bottom of a double boiler on the flame; fill with water so the top will fit 1 inch in water.
  2. Boil the water.
  3. Remove from the flame and place on a flat surface to beat.
  4. Place all ingredients in the top of the double boiler.
  5. Set the double boiler in the bottom pan of hot water and beat for 4 minutes.

Tips & Substitutions

To achieve the best results, ensure your bowl and beaters are completely clean and free of grease, as any fat can prevent the egg whites from whipping properly. If you don't have cream of tartar, you can substitute it with lemon juice or white vinegar. For a unique flavor twist, try adding a bit of almond extract in addition to the vanilla.

Serving Suggestions

This icing pairs beautifully with Filled Christmas Cookies, adding a light, sweet finish. It can also be used to frost cakes, cupcakes, or any dessert that needs a fluffy topping. For a festive touch, consider adding colored sprinkles or edible glitter right before serving.

Storage & Reheating

This icing is best used immediately, but if you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Rewhip the icing briefly before using it again, as it may lose some volume while stored. Avoid freezing, as it can affect the texture.

Frequently Asked Questions

Can I make this icing without a double boiler?

Yes, you can use a heatproof bowl set over a saucepan of simmering water if you don't have a double boiler. Just ensure the bowl doesn't touch the water, and follow the same procedure for beating the icing.

What can I use if I don't have egg whites?

If you're looking for an egg-free alternative, consider using aquafaba, the liquid from canned chickpeas, which can be whipped into stiff peaks just like egg whites. Use 3 tablespoons of aquafaba for each egg white required.

How can I adjust the sweetness of the icing?

To reduce the sweetness, consider using less sugar or adding a pinch of salt to balance the flavors. Alternatively, you can mix in a little bit of unsweetened cocoa powder if you're making a chocolate version.
