Ingredients

  • 1 large can tomato juice
  • 16 oz. can tomatoes, undrained
  • 2 cubes beef bouillon
  • 6 cups water
  • Stew meat, boned and trimmed
  • Potatoes

Instructions

  1. Combine tomato juice, undrained canned tomatoes, beef bouillon cubes, onion, celery, water, and trimmed stew meat in a crock‑pot.
  2. Stir occasionally if you are home during the day.
  3. Set the crock‑pot to low and cook for about 6 to 7 hours, until the meat is tender.
  4. About an hour before serving, parboil potatoes, carrots, onions, celery, and mixed vegetables; drain them.
  5. Add the cooked vegetables to the crock‑pot and stir.
  6. Serve hot, enjoying the flavors enhanced the next day.
