Nina'S Spinach

Ingredients

  • 1 lb. fresh spinach
  • 2 Tbsp. peanut oil
  • 2 Tbsp. soy sauce
  • 1/2 tsp. sugar
  • 2 Tbsp. finely chopped onion
  • 1 (8 oz.) can water chestnuts, drained and sliced

Instructions

  1. Wash and pat spinach leaves dry.
  2. Tear into bite size pieces. In large saucepan, simmer spinach with a small amount of water for 3 minutes.
  3. Drain thoroughly.
  4. Heat oil, soy sauce and sugar in a skillet.
  5. Add spinach and onion.
  6. Cook and toss until spinach is well coated, 2 to 3 minutes.
  7. Stir in water chestnuts.
  8. Makes 4 servings.
