Ingredients

  • 7 lb. whole cucumbers
  • 2 cups salt
  • 1 gallon water
  • 2 to 3 Tbsp. alum
  • 1 gallon water
  • vinegar 5%

Instructions

  1. Soak whole cucumbers in salt water for 1 week.
  2. Wash cucumbers and slice thin.
  3. Soak sliced cucumbers in alum solution for 24 hours.
  4. Rinse cucumbers well.
  5. Cover cucumbers with vinegar and let stand for 24 hours.
  6. Pour off the vinegar.
  7. Layer cucumbers with sugar and pickling spices (including cloves). More than 5 pounds of sugar may be used.
  8. These pickles do not have to be sealed.
