Ingredients

  • 3 1/2 c. shelled pecans
  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1/2 c. butter (not margarine)
  • 2 egg whites

Instructions

  1. Preheat oven to 325°.
  2. Toast pecans in oven for 8 minutes to warm them.
  3. Beat egg whites until soft peaks form.
  4. Add salt. Continue beating until slightly stiffened.
  5. Add sugar gradually until stiff peaks form.
  6. Add vanilla and beat until well blended. Fold warmed pecans into meringue mixture.
