Ingredients

  • 14 cup cooked chicken, finely chopped
  • 18 cup roasted red pepper, finely chopped
  • 14 cup cheese
  • 8 corn tortillas
  • 18 cup olive oil
  • 14 cup sharp cheddar cheese
  • 18 cup wheat germ

Instructions

  1. Add chicken, red peppers and a splash of olive oil to a small pan and heat on Med Low.
  2. In a second pan, heat remaining olive oil on Med High.
  3. Once the pan is hot, reduce to Med/Med-High.
  4. Lay one tortilla in the pan.
  5. Sprinkle with wheat germ and cheese as desired.
  6. Add meat/pepper mixture on top.
  7. Lay second tortilla on top.
  8. Heat on one side until crispy, then flip to heat the other side.
