Ohelo Cream Pie

- Prepare the shortbread crust and let it cool completely.
- Cream together the cream cheese, powdered sugar, and vanilla until smooth.
- Fold in the Cool Whip and spread the mixture evenly over the cooled crust.
- Chill the assembled crust and filling in the refrigerator.
- Place cleaned ohelo berries, water, lemon juice, and sugar in a pot.
- Cook and bring to a rolling boil.
- Continue boiling for 3 minutes.
- Remove from heat and dissolve gelatine in 1/2 cup water.
- Add the dissolved gelatine to the berry mixture and cool completely.
- Pour the berry mixture over the cream cheese layer and refrigerate until set.
