  • 2 (8 oz.) packages cream cheese
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 large tub Cool Whip (2 cups)
  • 4 cups ohelo berries, cleaned
  • 3/4 cup water
  • 2 tablespoons lemon juice
  • 2 cups sugar

Instructions

  1. Prepare the shortbread crust and let it cool completely.
  2. Cream together the cream cheese, powdered sugar, and vanilla until smooth.
  3. Fold in the Cool Whip and spread the mixture evenly over the cooled crust.
  4. Chill the assembled crust and filling in the refrigerator.
  5. Place cleaned ohelo berries, water, lemon juice, and sugar in a pot.
  6. Cook and bring to a rolling boil.
  7. Continue boiling for 3 minutes.
  8. Remove from heat and dissolve gelatine in 1/2 cup water.
  9. Add the dissolved gelatine to the berry mixture and cool completely.
