Okra N Rice

Ingredients

  • 1 pound okra
  • 1 large onion
  • 1 large green bell pepper
  • 3 slices bacon
  • 1 cup rice
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cut okra into rings and steam in very little water until tender.
  2. Add the steamed okra to bacon drippings and cook until light brown.
  3. Cut onion and green bell pepper into medium-fine pieces.
  4. Add the chopped onion and pepper to the okra along with the crumbled bacon.
  5. Add rice and 2 cups of water to the mixture, season with salt and pepper.
  6. Cook over medium heat for about 45 minutes or until the rice is done.
