Ingredients

  • 5 lb yellow cucumbers
  • 1 gallon water
  • 2 cups lime
  • 2 gallons water
  • 1 small box alum
  • 2 gallons water
  • 1 box pulverized ginger
  • 3 pints vinegar

Instructions

  1. Peel and core the cucumbers.
  2. Soak the cucumbers in 1 gallon of water and lime for 24 hours.
  3. Wash the cucumbers and soak for 24 hours in 2 gallons of water with alum.
  4. Wash and soak the cucumbers for 6 hours in 2 gallons of water mixed with pulverized ginger.
  5. Drain the cucumbers and soak for 3 to 4 hours in the remaining ingredients.
  6. Bring the mixture to a boil and cook for 1 hour.
  7. Bottle the pickles and seal them in the hot liquid.
