Old-Fashioned Bread Pudding(Light Recipe)

Ingredients

  • 2 eggs, slightly beaten
  • 1/3 c. firmly packed brown sugar
  • 2 c. skim milk
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 4 slices raisin bread, cubed

Instructions

  1. Preheat oven to 350°.
  2. Combine first 5 ingredients; add bread and stir well.
  3. Spoon mixture into an 8-inch square baking dish that has been coated with vegetable cooking spray.
  4. Place dish in a larger shallow pan; add water to a depth of 1 inch.
  5. Bake at 350° for 35 to 40 minutes or until a knife inserted in center comes out clean.
