Ingredients

  • 1 cup sugar
  • 1/4 cup flour
  • 1 tablespoon oleo
  • 1 tablespoon lemon juice
  • 1 can tart cherries
  • pastry for 2-crust pie

Instructions

  1. Combine sugar and flour; mix thoroughly.
  2. Add juice from cherries and cook over medium-low heat, stirring constantly, until mixture is thick and clear.
  3. Add cherries, oleo, and lemon juice. Let stand and make pastry.
  4. Fill the pie shell with the cherry mixture and top with remaining pastry.
  5. Pierce the top crust and flute the edges.
  6. Bake at 450°F for 10 minutes, then reduce heat to 350°F and bake for 45 minutes or until the top is golden brown.
