Ingredients

  • 7 1/2 cups all-purpose flour
  • 2 packages dry yeast
  • 2 1/4 cups milk
  • 1/2 cup shortening
  • 1/4 cup sugar
  • 2 teaspoons salt

Instructions

  1. In a large mixer bowl, combine 3 cups of flour and dry yeast.
  2. In a saucepan, heat milk, shortening, sugar, and salt just until warm and shortening is almost melted; stir constantly.
  3. Add the warm mixture to the flour and yeast mixture.
  4. Beat at low speed for 1/2 minute, scraping sides of the bowl.
  5. Beat 3 minutes at high speed.
  6. Gradually stir in as much remaining flour as you can mix with a spoon to form a dough.
  7. Turn out onto a lightly floured surface.
  8. Knead in enough of the remaining flour to make a moderately stiff, smooth, and elastic dough.
  9. Shape into a ball.
  10. Place in a lightly greased bowl at least twice the size of the dough.
  11. Turn the dough over once to grease the surface.
  12. Cover with a slightly damp cloth and let rise in a warm place until doubled in size, about 1 hour.
