Old Southern Corn Bread

Ingredients

  • 2 c. self-rising cornmeal
  • 1 c. self-rising flour
  • 1/2 c. sugar
  • 3 Tbsp. bacon drippings
  • 2 eggs, beaten
  • 2 c. buttermilk

Instructions

  1. Combine cornmeal, flour and sugar in medium bowl; mix well. Add 3 tablespoons bacon drippings, eggs and buttermilk; mix well. Heat remaining 2 tablespoons bacon drippings in 10-inch cast-iron skillet until sizzling hot.
  2. Pour batter into skillet.
  3. Cook over medium heat until batter is bubbly.
  4. Bake at 400° for 35 to 45 minutes or until brown.
  5. Yield:
