Onion Fried Rice

Ingredients

  • 8 strips bacon
  • 1 large Vidalia onion
  • 3 eggs, well beaten
  • 1 lb. fresh mushrooms, sliced or 1 large can, drained
  • 2 1/2 c. cooked, day old rice
  • 1/4 c. soy sauce
  • 1 can water chestnuts, drained and sliced
  • leftover chicken, pork or shrimp

Instructions

  1. Cook bacon until crisp.
  2. Drain on paper towel and crumble, leaving bacon grease in pan. Saute onion in grease over medium heat until tender. Add eggs. Scramble until done.
  3. Add rice, bacon, water chestnuts, mushrooms and chopped meat.
  4. Sprinkle in soy sauce to taste and stir over low heat until thoroughly mixed and warm.
