Ingredients

  • 1 large Vidalia or sweet onion
  • 2 Tbsp. flour
  • 1 large egg
  • 1 c. saltine cracker crumbs
  • vegetable oil

Instructions

  1. Peel onion, leaving root end intact.
  2. Cut onion vertically into quarters, cutting to within 1/2-inch of root end.
  3. Cut each quarter into thirds.
  4. Place onion in boiling water for 1 minute.
  5. Remove and place in ice water for 5 minutes.
  6. Loosen petals if necessary. Drain onion cut side down.
  7. Place flour in a Ziploc bag.
  8. Add onion, shaking to coat.
  9. Dip onion in beaten egg.
  10. Place cracker crumbs in a plastic bag.
  11. Add onion, tossing to coat.
  12. Chill for 1 hour.
  13. Pour oil to depth of 3 inches into a fryer and heat to 375°F.
  14. Fry onion 5 to 7 minutes or until golden brown; drain on paper towel.
  15. Salt if necessary.
  16. Serve with dressings such as honey mustard or Ranch.
