A vibrant, citrus-infused cabbage slaw combining crunchy green and red cabbage with sweet oranges and fresh scallions, perfect as a refreshing side or light lunch.

Ingredients

  • 1 large orange
  • 2 tsp. white wine vinegar
  • 2 tsp. sesame oil
  • 1/2 tsp. salt
  • 1/2 small head green cabbage, cored and thinly sliced
  • 1/2 small head red cabbage, cored and thinly sliced
  • 4 scallions, thinly sliced diagonally
  • 3 medium carrots, grated

Instructions

  1. From the orange, grate enough zest to measure 1 1/4 teaspoons and squeeze the juice.
  2. Place the orange zest and juice in a large bowl. Discard the squeezed orange.
  3. Whisk in the white wine vinegar, sesame oil, and salt until well combined.
  4. Add the sliced green cabbage, red cabbage, scallions, and grated carrots.
  5. Toss well to combine all ingredients.
  6. Cover and refrigerate for at least 1 hour before serving to allow flavors to blend.
