Orange Doughnuts

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 2 tablespoons grated orange rind
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Vegetable oil

Instructions

  1. Beat eggs 2 minutes at medium speed of electric mixer; add sugar, beating well. Add rind, juice, and oil; mix well.
  2. Combine flour, baking powder, and salt; add to egg mixture, beating until smooth.
  3. Drop batter by level tablespoonfuls into deep oil heated to 375°. Fry until golden, turning once. Drain well on paper towels. Roll each doughnut in powdered sugar.
