Ingredients

  • 2 to 3 c. rice
  • 2 eggs, scrambled
  • 1 c. chopped ham, cubed small
  • 1/2 can peas
  • 1/2 c. or less onions, chopped

Instructions

  1. Cook rice.
  2. Prepare skillet with butter or vegetable oil. Cook onions and ham.
  3. Add rice.
  4. Microwave 2 eggs and chop up into tiny pieces.
  5. Cook peas.
  6. Simmer.
  7. Add eggs and peas into the skillet with the rest of the ingredients.
  8. Simmer.
  9. Serves 5 to 6 people.
