- Remove skin, wash and cut off feet.
- Soak an hour in salt water.
- Beat an egg lightly.
- Salt and pepper legs.
- Dip in meal or crumbs, then in egg.
- Dip again in meal.
- Fry in deep fat.
- Be sure to drain off all grease when finished.
