Ingredients

  • 1 medium potato (boiled, peeled, and mashed)
  • 1-2 boxes powdered sugar
  • 1 teaspoon pure vanilla extract
  • Creamy peanut butter

Instructions

  1. Add vanilla extract to the mashed potato and mix well.
  2. Roll out the mashed potato on a surface dusted with powdered sugar.
  3. Spread creamy peanut butter over the surface of the rolled-out potato.
  4. Roll up the potato like a jelly roll or cinnamon roll.
  5. Slice the roll into 1/2 to 3/4 inch slices.
  6. Keep stretching the roll to maximize the number of candy pieces.
  7. Refrigerate the slices covered with wax paper and loose plastic wrap.
  8. Remove from refrigerator when ready to eat, either all at once or piece by piece.
