Ingredients

  • 1/3 lb. fish filets per person (mild fish only)
  • 2 whole tomatoes, diced and seeded
  • 1 whole green pepper, sliced
  • 1 whole yellow onion, ringed
  • 1-2 cloves of garlic, minced
  • 1 tsp. hot sauce
  • salt and pepper to taste
  • olive oil
  • cooking bag

Instructions

  1. Oil inside of cooking bag.
  2. Place fish filets flat inside bag; add salt, pepper, hot sauce and garlic.
  3. Layer tomatoes, onions and peppers over filets.
  4. Seal bag and place on baking sheet; cut slits in bag.
  5. Place in 350° oven for approximately 20 minutes.
  6. Bag should swell and balloon when done.
  7. Remove fish and veggies with slotted spoon and serve over rice.
