Parmesan Fritters

Instructions
- Mix the flour, water, salt and parmesan until thick and smooth.
- In a separate bowl combine ricotta cheese and pesto.
- Heat oil in a large fry pan.
- Drop 2 tablespoons of parmesan mixture into pan, top with 1 tablespoon of ricotta and pesto and finish with another 2 tablespoons of parmesan mixture.
- Turn over fritter and cook until golden.
- Serve plain for the kids and with a spicy chilli or tomato sauce for the adults.
