Ingredients

  • 1/4 cup butter or margarine
  • 3 medium-large potatoes (6 to 8 oz. each), well scrubbed and cut in 1-inch cubes
  • grated Parmesan cheese
  • 1 teaspoon salt

Instructions

  1. Place butter in a 9 x 5 x 3-inch loaf dish.
  2. Microwave on High for 30 seconds to 1 minute to melt the butter.
  3. Stir potatoes into the melted butter to coat.
  4. Add grated Parmesan cheese and salt to taste.
  5. Stir well to combine.
  6. Cover with plastic wrap, turning back one corner to vent.
  7. Cook on High for 15 minutes, rotating after 8 minutes.
