Partridge Fillet

Instructions
- Cut finer sized pieces of the partridge breast.
- Melt butter and add the lemon juice.
- Dip the partridge pieces in the butter mixture and spread out on a plate and let set for a few minutes. Roll the pieces in the bread crumbs.
- Dip the pieces in the egg and roll in crumbs again.
- Fry in fat until done, about 5 minutes.
