Ingredients

  • 1 doz. eggs, beaten
  • 1 bell pepper, chopped
  • 1 can Ro-Tel
  • 1 lb. chopped ham (optional)
  • 1/2 stick margarine, melted
  • 1 lb. Velveeta, chopped

Instructions

  1. Grease a 13 x 9-inch pan.
  2. Combine all ingredients in a large bowl.
  3. Pour into pan and bake at 350° for 1 hour.
  4. Bake, uncovered, until brown around the sides.
  5. Can be frozen.
  6. (Defrost 15 minutes.)
