Passover Apple Cake

- Peel and slice the apples as for a pie.
- Add a little sugar, cinnamon, and lemon juice to the sliced apples. Set aside.
- Beat the 3 eggs in a bowl.
- Add 1/4 cup sugar and matzo meal to the beaten eggs and mix well.
- Fold the prepared apples into the egg mixture.
- Grease a 9-inch pie plate.
- Pour the apple and egg mixture into the pie plate.
- Bake at 350°F for 30 to 40 minutes until golden and set.
