Ingredients

  • 3 eggs
  • 1/4 cup sugar
  • 1/2 cup matzo meal
  • 4 to 5 apples
  • lemon juice
  • cinnamon

Instructions

  1. Peel and slice the apples as for a pie.
  2. Add a little sugar, cinnamon, and lemon juice to the sliced apples. Set aside.
  3. Beat the 3 eggs in a bowl.
  4. Add 1/4 cup sugar and matzo meal to the beaten eggs and mix well.
  5. Fold the prepared apples into the egg mixture.
  6. Grease a 9-inch pie plate.
  7. Pour the apple and egg mixture into the pie plate.
  8. Bake at 350°F for 30 to 40 minutes until golden and set.
