Ingredients

  • 1/2 cup butter or margarine, softened
  • 1/3 cup sugar
  • 1 to 1 1/2 cups rye flour
  • 1 egg, beaten
  • 1/2 cup all-purpose flour

Instructions

  1. Heat oven to 400°F (200°C).
  2. Beat butter and sugar until light and fluffy.
  3. Stir in rye flour and all-purpose flour.
  4. Mix in the beaten egg.
  5. Work dough to 1/8-inch thickness on a light floured cloth-covered board.
  6. Cut into 2-inch circles.
  7. Place cookies 1 inch apart on greased baking sheets.
  8. Cut a hole slightly off-center in each cookie using a small bottle cap or thimble.
  9. Prick the entire cookie with a fork.
  10. Bake until light brown, about 5 to 7 minutes.
  11. Cool on wire racks.
