Passover Date Nut Cake

Ingredients

  • 3 eggs
  • 1/2 c. oil
  • 1 c. sugar
  • 3/4 c. cake meal
  • 1/2 tsp. potato flour
  • 1 c. dates
  • 1 c. nuts

Instructions

  1. Beat eggs.
  2. Add oil and sugar.
  3. Beat well.
  4. Chop dates and nuts.
  5. Add to mixture with remainder of ingredients. Pour into greased 8 x 8-inch pan.
  6. Bake 30 minutes at 350°.
  7. Cut into squares a few minutes after removing from oven.
