Pat'S Catfish Stew
Ingredients
Instructions
- Fry bacon until crisp; remove and save for topping.
- Add onion and potatoes.
- Saute, stirring often, until onions are golden. Stir in seasonings, tomatoes and water.
- Cover.
- Simmer on low heat about 25 minutes.
- Add fish and continue to cook for 20 minutes more or until fish is tender.
- Ladle into bowls and top with bacon bits.
- Serve with crackers or cornbread muffins.
