Ingredients

  • leftover black-eyed peas
  • 1 large onion, chopped
  • 1 egg
  • 1 1/2 c. milk
  • 1 c. flour

Instructions

  1. Mix all ingredients.
  2. It should have a texture like pancake batter.
  3. Use a large spoon and drop by spoonfuls onto hot, greased pan, and cook like pancakes.
  4. Cook until crispy.
