Peach Julep

Ingredients

  • 1 (16 oz.) can peaches or 2 c. fresh pureed peaches plus 3 Tbsp. sugar
  • 6 sprigs fresh mint
  • 3 Tbsp. lime juice
  • 1/4 tsp. grated lime rind
  • 1/4 tsp. grated orange rind
  • 1/3 c. orange juice
  • 1 qt. chilled ginger ale

Instructions

  1. If using canned peaches, drain and puree them in saucepan. If fresh peaches, peel, puree and add sugar to them in saucepan. Add 3 mint sprigs and stir until mint is thoroughly bruised. Cool.
  2. Remove mint and add the juices and grated bits of rind; chill.
  3. Just before serving, add ginger ale and garnish with remaining mint sprigs.
