- Blend shortening and sugar with a mixer until well combined.
- Sift flour, baking powder, and salt three times to ensure even mixing.
- Alternately add flour mixture and lukewarm water (2 tablespoons at a time) to the sugar mixture, beginning and ending with the flour mixture.
- Add half of the egg whites and continue mixing.
- Repeat adding flour and water until all are incorporated.
- Add the remaining egg whites, almond extract, and lemon extract, then mix well.
- Pour the batter into three 9-inch layer pans.
- Bake at 325°F (160°C) for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
- Cool the cakes and frost with divinity icing.
