Ingredients

  • sugar
  • almond extract
  • egg whites
  • flour
  • lukewarm water
  • lemon extract
  • baking powder
  • salt

Instructions

  1. Blend shortening and sugar with a mixer until well combined.
  2. Sift flour, baking powder, and salt three times to ensure even mixing.
  3. Alternately add flour mixture and lukewarm water (2 tablespoons at a time) to the sugar mixture, beginning and ending with the flour mixture.
  4. Add half of the egg whites and continue mixing.
  5. Repeat adding flour and water until all are incorporated.
  6. Add the remaining egg whites, almond extract, and lemon extract, then mix well.
  7. Pour the batter into three 9-inch layer pans.
  8. Bake at 325°F (160°C) for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  9. Cool the cakes and frost with divinity icing.
