Ingredients

  • 2 lb. carrots
  • 1 can tomato soup
  • 1/2 cup salad oil
  • 1 cup sugar
  • 3/4 cup vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon dill seed
  • 1/2 teaspoon black pepper
  • 1 large green pepper, diced
  • 1 large onion, diced
  • 1 envelope unflavored gelatin

Instructions

  1. Peel the carrots and slice them into 1/4-inch rings.
  2. Cook or steam the sliced carrots until tender-crisp; drain and set aside.
  3. Combine tomato soup, salad oil, sugar, vinegar, salt, dill seed, and black pepper in a saucepan; bring to a boil to dissolve the sugar and seasonings.
  4. In 1/4 cup of water, dissolve the unflavored gelatin and stir into the hot soup mixture until completely melted.
  5. In a 2-quart container, combine the cooked carrots, diced green pepper, and diced onion.
  6. Pour the hot soup mixture over the vegetables; mix well and let stand overnight to set.
