Instructions
- Combine first 2 ingredients in bowl and beat until smooth. Add vanilla.
- Stir in flour and mix until dough begins to form. Add pecans and continue working the mixture until all is incorporated.
- Shape dough into a log, about 1 1/2-inches thick. Roll up in waxed paper or foil.
- Chill for 30 minutes.
- Unwrap dough and slice into 1/4-inch thick rounds.
- Bake 10 minutes; cool slightly.
- Remove from tin.
- Sprinkle with confectioners sugar.
