Pepper Pie

Ingredients

  • 3 eggs
  • 2 1/2 c. grated mild Cheddar cheese
  • 2 1/2 c. grated sharp Cheddar cheese

Instructions

  1. Place sliced jalapeno peppers in the bottom of a 9 x 13-inch casserole dish.
  2. Combine cheeses together and spread on top of peppers.
  3. Beat eggs and pour over cheese.
  4. Bake at 350° for approximately 15 to 20 minutes.
  5. Pie is done when edges are lightly brown and eggs are done in center of pie.
