Peppercorn Steak

Ingredients

  • 1/4 c. cracked pepper
  • 4 (4 to 5 oz.) beef tenderloin steaks
  • 1 c. chopped green onions
  • 1 lb. fresh mushrooms, sliced
  • 1/4 c. butter or margarine, melted
  • 1 lb. bacon, cooked and crumbled
  • 3 Tbsp. Chablis or other dry white wine
  • vegetable cooking spray

Instructions

  1. Pound pepper into both sides of steaks using a meat mallet. Set steaks aside.
  2. Saute onions and mushrooms in butter in a skillet until tender.
  3. Add bacon and wine; set aside and keep warm.
  4. Place steaks on a broiler rack coated with cooking spray. Place rack in broiler pan.
  5. Broil 4 to 6 inches from heat for 8 to 10 minutes on each side or to desired degree of doneness.
  6. Remove steaks to a platter and top with mushroom mixture.
  7. Makes 4 servings.
