Peppermint Drum Cake

- Beat shortening at medium speed with an electric mixer until fluffy. Gradually add sugar.
- Beat well. Combine flour, baking powder and salt. Add to creamed mixture alternately with milk. Begin and end with flour mixture.
- Mix after each addition.
- Stir in vanilla. Beat egg whites at high speed with an electric mixer until stiff peaks form.
- Gently fold into batter.
- Pour into 3 greased 9-inch cake pans.
- Bake at 350° for 20 minutes.
