Peppy Pinto Beans

Ingredients

  • 1 lb. dried pinto beans
  • 4 1/2 c. water
  • 1 (4 oz.) can chopped green chilies, drained
  • 2 cloves garlic, minced
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1 1/2 c. (6 oz.) shredded Monterey Jack cheese with or without jalapeno

Instructions

  1. Sort and wash beans; place in large Dutch oven.
  2. Cover with water, 2-inches above beans.
  3. Let soak 8 hours.
  4. Drain beans and return to Dutch oven.
  5. Add water, chilies, garlic, chili powder and salt to beans.
  6. Bring to boil, cover, reduce heat and simmer 2 hours or until beans are tender, stirring occasionally.
  7. Transfer to serving dish and sprinkle with cheese.
