Ingredients

  • 1 peck green tomatoes
  • 12 red peppers
  • 12 green peppers
  • 1 qt. small onions
  • 3 qt. cider vinegar
  • 7 c. granulated sugar
  • 1/2 c. salt
  • 1 c. mustard seed
  • 3 Tbsp. celery seed
  • 1 Tbsp. cinnamon

Instructions

  1. Grind tomatoes, pepper and onion.
  2. Set over colander and drain.
  3. Discard liquid.
  4. Put mixture in pot.
  5. Add 2 quarts vinegar.
  6. Boil uncovered for 30 minutes.
  7. Stir.
  8. Drain in colander and discard liquid.
  9. Put mixture in pot again.
  10. Add remaining ingredients.
  11. Simmer 3 minutes.
  12. Seal and process in pint jars 10 minutes.
  13. Makes 12 pints.
