Pickle Coleslaw
Ingredients
- 1 (10-oz.) pkg. finely shredded cabbage (such as Angel Hair Slaw) ⓘ
- 1 1/2 cups thinly sliced dill pickle chips, plus 3 Tbsp. pickle juice, divided
- 1 cup matchstick carrots ⓘ
- 3/4 cup mayonnaise ⓘ
- 1 tablespoon fresh lemon juice (from 1 lemon) ⓘ
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper ⓘ
- 1/4 teaspoon granulated sugar ⓘ
- 2 tablespoons thinly sliced fresh chives ⓘ
- 2 teaspoons chopped fresh dill ⓘ
Instructions
- Whisk together mayonnaise, pickle juice, lemon juice, salt, pepper, and sugar in a medium bowl.
- Add mayonnaise mixture, chives, and dill to cabbage mixture; toss to coat well. Serve immediately.
