Pickled Beets - Eggs

Ingredients

  • 1 can beets and juice
  • 1 c. cider vinegar
  • 1/3 c. sugar
  • 3 whole cloves
  • 3/4 tsp. salt
  • 1/4 c. water
  • 8 hard-cooked eggs

Instructions

  1. Put beets and juice in a pan.
  2. Add vinegar, sugar, salt and cloves.
  3. Heat until sugar dissolves.
  4. Cool.
  5. Cook and shell eggs. Put in jar or bowl; pour beets over eggs.
  6. Add water to bring juice over eggs.
  7. Marinate 2 to 3 days, stirring several times.
