Pickled Cantaloupe

Ingredients

  • 1 c. vinegar
  • 1 c. water
  • 1 cantaloupe
  • 2 c. sugar

Instructions

  1. Peel and dice cantaloupe.
  2. Soak in 1 cup each of vinegar and sugar overnight.
  3. Remove fruit.
  4. Boil 2 cups each of vinegar and sugar.
  5. Add cantaloupe to syrup and cook until tender, about 5 minutes.
  6. Pack cantaloupe in jars or put in large bowl.
  7. Boil syrup 10 minutes, until thick.
  8. Pour over cantaloupe and seal in jars or pour over fruit in large bowl.
  9. Cool.
