Ingredients

  • 1 cup chickpeas
  • 1/4 cup urd dhal
  • 3 red dry chillies
  • 2 green chillies
  • small pieces of ginger
  • 2 onions
  • oil for frying
  • salt to taste
  • mint leaves (optional)

Instructions

  1. Soak chickpeas and urd dhal in water for about 2 hours.
  2. Drain all the water and coarsely grind with dry red chillies to form a solid mixture.
  3. Cut onions, green chillies, and ginger into small pieces and mix them into the ground mixture.
  4. Take a tablespoon of the mixture, shape it into a ball or patty, and fry in oil until golden brown.
  5. Serve hot with ketchup.

Tips & Substitutions

For a lighter vada, consider using a mix of chickpeas and lentils, or replace some chickpeas with cooked quinoa. If you prefer less heat, reduce the number of green and red chillies. Adding a pinch of garam masala can enhance the flavor, reminiscent of traditional Indian recipes. Make sure to keep the oil hot when frying for a crispy texture.

Serving Suggestions

Serve vadas hot, garnished with fresh mint leaves, and pair with ketchup or green chutney for dipping. They make a great snack or appetizer and can be enjoyed alongside a refreshing Indian salad, such as Indian Recipe - Chickpea Salad. For a complete meal, consider serving with curried lentils and rice.

Storage & Reheating

Store leftover vadas in an airtight container in the refrigerator for up to 2 days. To reheat, place them in an oven at 350°F (175°C) for about 10 minutes to restore their crispiness, or use an air fryer for a quick reheating method. Avoid microwaving as it may make them soggy.

Frequently Asked Questions

Can I use canned chickpeas for this recipe?

While you can use canned chickpeas, it's best to use dried chickpeas that have been soaked to maintain the proper texture. Canned chickpeas may lead to a mushy mixture, which won't hold its shape when frying.

What can I substitute for urd dhal?

If you can't find urd dhal, you can substitute equal parts split yellow lentils or red lentils for a similar texture. However, the flavor may differ slightly. Adjust the spices to enhance the taste according to your preference.

How can I make these vadas gluten-free?

This vada recipe is naturally gluten-free, as it primarily uses chickpeas and urd dhal. Just ensure that any additional spices or condiments you use, like ketchup, are also gluten-free to keep the entire dish safe for those with gluten sensitivities.
