Ingredients

  • 4 c. carrot sticks
  • 3/4 c. vinegar
  • 3/4 c. sugar
  • 1 Tbsp. mustard seed
  • 1 Tbsp. celery seed

Instructions

  1. Cook carrot sticks in boiling water for 5 minutes. Drain and set aside.
  2. In a saucepan, combine vinegar, sugar, mustard seed, and celery seed with 1/2 cup water. Bring to the boil.
  3. Add the cooked carrots to the saucepan; cover and cook for 6 to 7 minutes, until carrots are tender but still crisp.
  4. Chill in the vinegar mixture overnight before serving.
