Pine Nut Butterballs

Ingredients

  • 1 cup unsalted butter
  • 12 cup granulated sugar
  • 14 teaspoon salt
  • 2 cups all-purpose flour
  • 2 teaspoons vanilla
  • 1 cup pine nuts, chopped
  • powdered sugar, to taste

Instructions

  1. Cream together butter and sugar until smooth.
  2. Sift together salt and flour.
  3. Add flour mixture to the butter mixture, and mix well.
  4. Add vanila& nuts and stir until combined well.
  5. Chill until easy to handle (1 hour or overnight).
  6. Preheat oven to 350 degrees F.
  7. Form into small balls (approximately 3 dozen) and roll in some powdered sugar to coat.
  8. Set on greased baking sheets and bake for 12-15 minutes.
  9. Cool on wire racks.
