Ingredients

  • 1 (No. 2) can crushed pineapple
  • 1 package lemon Jell-O
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1 cup grated carrots
  • 1/2 pint whipping cream

Instructions

  1. Drain the crushed pineapple and add enough water to the syrup to make 1 1/2 cups.
  2. Heat the pineapple mixture and add it to the prepared lemon Jell-O.
  3. Stir in sugar, salt, and lemon juice. Chill until slightly thickened.
  4. Fold in the drained pineapple and grated carrots.
  5. Whip the cream until stiff and fold into the Jell-O mixture.
  6. Pour the mixture into an 8-inch ring mold.
  7. Refrigerate overnight or until thoroughly set before serving.
