Pineapple-Carrot Mold

Instructions
- Drain the crushed pineapple and add enough water to the syrup to make 1 1/2 cups.
- Heat the pineapple mixture and add it to the prepared lemon Jell-O.
- Stir in sugar, salt, and lemon juice. Chill until slightly thickened.
- Fold in the drained pineapple and grated carrots.
- Whip the cream until stiff and fold into the Jell-O mixture.
- Pour the mixture into an 8-inch ring mold.
- Refrigerate overnight or until thoroughly set before serving.
