Pineapple Cheesecake(Dietetic)

Ingredients

  • 20 oz. can crushed pineapple, packed in own juice
  • 2 envelopes unflavored gelatin
  • 1/2 c. hot water
  • 1 1/3 c. skim milk powder (no water added)
  • 2 pkg. sugar substitute
  • 2 tsp. vanilla
  • 1/2 tsp. lemon juice
  • 1/2 tsp. butter flavoring

Instructions

  1. Place drained pineapple in blender with half of its juice. Add gelatin and hot water; blend 2 minutes.
  2. Add dry milk and remainder of juice, sweetener, flavorings and lemon juice.
  3. Blend for 3 minutes.
  4. Pour into a 10-inch pan, sprinkle lightly with cinnamon and allow to set for 1 hour.
  5. Yield: 8 servings.
