Ingredients

  • 3 cups vanilla wafer crumbs
  • 1/2 cup melted butter
  • 2 tablespoons lemon juice
  • sugar to taste

Instructions

  1. Push the vanilla wafer crumbs through a colander to create a fine crust.
  2. Mix the wafer crumbs with melted butter until well combined.
  3. Press the mixture into the bottom of a spring-form pan to form the crust.
  4. Bake or chill the crust as desired before adding the filling.
  5. Prepare the pineapple cheesecake filling and pour over the crust.
  6. Chill the cheesecake until set before serving.
  7. Add lemon juice and sugar to taste to enhance flavor.
