Ingredients

  • 2 (8 ounce.) Packages cream cheese (softened)
  • 1/4 c. plus 1 tbsp. pineapple juice
  • 1 tbsp. lemon juice
  • 1 tbsp. grated orange rind
  • 1 1/2 to 2 teaspoon grnd ginger
  • 1/4 c. flaked coconut, toasted
  • 2 tbsp. powdered sugar (optional)

Instructions

  1. Beat cream cheese till light and fluffy.
  2. Stir in remaining ingredients.
  3. Serve with fresh fruit.
  4. Yields 2 c..
  5. This is delicious with fruit.
